Missing pancakes? Look no further!! Almond meal griddle cakes are easy, scrumptious, and will stay fresh for a few days in the fridge. Kids will like them too! Here is my recipe:
2 cups almond meal
3 eggs
1/2 can coconut milk
3 tbsps of either walnut oil or coconut oil
2 apples grated
Cinnamon to taste
Mix all ingredients together and spoon small cakes onto a super hot griddle or frying pan greased with walnut or coconut oil. These cakes are great warm or cold and are delicious served with chicken sausages or scrambled eggs. Enjoy!

For half a million people, my city can be so behind the times! I had to order my Almond Meal online, I can’t wait; I had never heard of it before and am excited to have a viable option. Pancakes are my ultimate weakness (Christmas tradition is Chocalate Chip P-cakes with Vanilla Ice Cream!) I am really looking forward to trying this. I’ll let you know how it goes.

They sound good, but you better be a CrossFittin machine to burn up all those carbs & cals.
Pancakes were tough for me to give up too, so I’ve been trying to come up with a decent recipe for a while now.
